Is it meant to show a random bunch of letters and numbers when I link my YouTube account to my halo waypoint or when someone else sees my profile will it just say youtube and thats it?

I don’t believe those random characters are supposed to be there when you link your YouTube Accounnt. It appeared to me like that when I visited your profile, although clicking the link still takes me to your YouTube Channel.
You can always submit a ticket on the support site if you think this is an issue.
