Alright so I start up the game and its in borderless mode, I hit “alt+enter” (or F11) and the game switches the setting to windowed mode , but the game is still full screen. I have tried uninstalling and reinstalling. I have also tried changing the compatibilty of the mcclauncher.exe to disable fullscreen optimizations. Neither have worked.

Same thing happened to me. I have no Idea what might have caused it, only that it probably has something to do with Nvidia since it happened when I openend Geforce Experience and it “optimized” it.
try going to video settings, turning the window mode to windowed, and changing the aspect ratio
