Don’t get me wrong: I love me some covies, but I feel like I’ve gotten bored with them. After 9 (I think) games with the Covenant as the main Antagonists, (You could Argue Halo 4’s main enemy was the Prometheans, and Combat Evolved’s being The Flood) the biggest shakeup in how we fight enemy forces was in Halo 3, where the Brutes had replaced the Elites.
My hope is that somewhere along the line we double down on the Prometheans, maybe fight insurrectionists, or at the very least, have a half-decent ingame explanation as to why we’re still fighting the Covenant.
They could always bring back the brutes. I want see some brutes allied with Jul’s Elites. Imagine a pack of Brutes and Elites working together trying to kill you.
Halo 5 will probably deal a lot with the Covenant Remnant, but I hope that we start to get more into Forerunner and Promethean enemies in Halo 6. I would love to see a shift from fighting Covenant to a rekindling of the Human-Forerunner War. I think it would be amazing to have another full-scale war between those two.
Hasn’t Halo4 done this already? As yes, I expect a continuation of the old and rigid races being swept aside by the Flood and still live Forerunner remnants as ONI thinks it’s fighting for human survival while John actually does 
When Chief said in Halo3 “It’s finished.” he did not realise only the first story in his saga was finished. He has yet to deal with why he was created, both by ONI to squash fellow humans and by the Librarian to fight against the still living Forerunner who reflect ONI’s means-to-an-end philosophy.
The Covenant are no longer a galactic threat, just one of the many small factions in the galaxy about to fight for their existence on a greater level.
I quite like them as the primary enemy, still enjoy shooting their faces, and hope they persist as Chief’s main adversary.

No.
I truly cannot imagine that. Elites and Brutes working together in the Covenant before hand wasn’t something that happened much.
Now after everything that has happened? The Great Schism? The Brutes sort of represented themselves as lackeys of the ‘evil’ prophets.
There is no way that the seemingly very conservative branch of Covenant that serves Jul would ever associate themselves with Brutes again.
Especially the Elites.
Plus, haven’t the Elites in general royally screwed over the Brutes mostly after the war was over?
Probably not, wherever there are Forerunner structures, the Remnant of the Covenant will follow. In Halo 5 though, the focus will most likely be on the forerunners and having some of their creations as our enemy or another rouge Forerunner maybe. (from the cover-art at least) Though this is just my theory.
Also, since we are dealing with remnants of the Covenant in the aftermath of the Human-Covenant war, the Covenant will probably always be our enemy, at least for a few decades since it will take a long time for the UNSC to take care of the remnants, even with the Elites help.
I actually happen to really like fighting the covenant. There is something consistently comforting about fighting them, it just feels right when you land a headshot on a grunt or an elite who’s shield is down. I doubt that will ever get old, imo.
However, that’s not to say I’m against innovation. I like new enemy types and new threats. I found the Prometheans to be interesting in Halo 4 (although definitely not as fun to kill as the “organic” covenant). I’m interested to see what 343 does with Halo 5.
I don’t necessarily mind fighting them, but I don’t want to keep fighting them until the end of time.

But new or different enemies is always fun!
With the way things are looking I wouldn’t be surprised if we take on other Spartans.
I like the idea of the ancient enemy being the main threat of the Reclaimer Saga. That and probably ONI, because there seems to be some sort of conspiracy going on with them.

I thought the UNSC was not fighting the covenant… I thought UNSC is fighting against Jul Mdama’s forces?
I would like to see some grunt factions side with humans. After what happened during the grunt rebellion they have every reason to hate the covenant.

Not all Brutes are the same. some are attempting to ally with the Arbiter and the UNSC, and have even fought alongside each other (albeit with some tension).
One thing I would love to see a change in Promethean forces… We know that Prometheans have been created from past humans… Now the Storm faction of the Covenant has access to old forerunner tech, who’s to say they won’t make Elites into promeatheans as well? What about a Promethean version of a hunter?
