Which modes let me use my own load out?

Sorry if this has already been asked, but I took a break from Halo 4 and when I came back to play a regular Big Team infinity slayer I found that I couldn’t use my own load out but had to choose from a bunch of preset load outs.
Now my questions:
which modes let me use my own load out? Or which modes have preset load outs I need to choose from?
Cause I thought this was something that was only for “Pro” modes. But it seems to not be the case.

Anything with the word “Infinity” in the gametype’s name will let you use custom Loadouts.

those along with Lockdown, Dominion, Ricochet, Oddball, and a new Team slayer Gametype, the name of which escapes me.

all others have pre-set loadouts
