How do you think other species that are composed? The Prometheans (Knights at least) looked the way they look is because they’re ancient Humans. How do you think Sangheili, Unggoy, San 'Shyuum would look like?
The knights were created, then the ai was injected into them (or at least that’s my understanding), so they would look the same.
