So I keep seeing this thing in the Launch Trailer and I have seen it in another video 343 put out.

Perhaps.

But it also looks a bit like the sphere that housed the Didact.
Maybe he uses that as a mobile weapon of sorts? Because it seems to be opening and showing some sort of “eye” and arms that could be weaponry.
So maybe its smooth in normal shape, and like this when used as a weapon?

Considering…

One of the achievements in the game is called, “Composer”, I actually think the Composer may be in the game somehow.

Definitely not the Composer. I doubt the Forerunners would have left such a powerful object simply floating in the air. Plus, it looks like something for excavation or combat, rather than proper composing of an organic.

Possibly some kind of Forerunner machine, maybe even a sort of guardian Sentinel or something similar.

Could just be forerunner scenery, to be honest.

I was under the impression the composer was a large ‘stationary’ machine that was in a room (based on the book).

The picture you have looks more like a Cryptum, based on suggestions from the first trailer & what was described in the first Greg Bear book.
