For me…based on tough and fun…the achievement from Halo: Reach - “If they came to hear me beg”…or something like that. You had to jump off a cliff (just before you make the long mongoose run) and land on top of an elite below while performing an assassination!
On my old Xbox Live account I used to have all but one halo Reach Achievement, it was that one where you get a Skullaminjaro on an Anniversary map. I came a second away from getting it once then my brother killed me.
There were also like 2 or 3 Halo 3 achievements I got stuck on, I can’t remember which ones.
I also had to use an infinite shield bot to beat Halo 2 PC on Legendary. Halo 2 is really hard for some reason.
“you blew it up” on Halo Reach… It is next to impossible due to players not having DLC.
Vidmaster Annual on Halo 3, It took me weeks to find a competent team of 3 others who didn’t suck lol.

In Pillar of Autumn you can do it quite easily. Just have some patience, though. The vidmaster challenges in ODST are really hard.
Annual (H3 Vidmaster) and Endure (ODST Vidmaster)
For me Speed Reader in Halo CE Anniversary and all multiplayer achievements… I suck at it
“Save This Film” from Halo 3. Perfection medal (15 kills, no deaths) on any Mythic map. Not the hardest, no, but up there.
