There was different story and gameplay at E3, and I liked that introduction of the Prometheans a lot better than the one in the real game, but we didn’t get to play it
I think he’s talking about the little things… Like when the Knight pops up and his helmet opens, revealing his skull.

That was just a promo video disguised as gameplay. If you watch where they showed it off (E3, Jimmy Fallon etc), you’ll see that every movement was exactly the same.
that part (the scenery etc.) is in the game, the voice overs and gameplay were scripted though.

If you’re talking about the first encounters with the Prometheans, that was never meant to be in that level (Infinity). As you can see in the game, Prometheans are first encountered in the level Forerunner (technically the end of Requiem). 343 changed some things up for the sake of the demo, and they were perfectly clear about that during E3, subsequent interviews, and in “making of” videos.

I just played through the campaign again, that does happen in the jungle mission(Infinity?) The Kinght jumps down on me and yells in my face and then Cortana goes on to say something related to plasma energy or something.
The weapon introduction was better in E3 though. Cortana talked a bit about the gun and all that stuff.
In the final build Chief picks a Promethean gun and no reaction from Cortana at all. It feels like Chief used them in countless games before.
But yeah, that active camo from the Elite got like 3 lines, lol
