Does anyone know what actually changes in these large updates? How could MCC need so many 10+, 20+, 30+GB updates?

I may be wrong but the reason I think the MCC has large download sizes is that a large portion of the content is bug fix related which makes us re-download assets, alongside adding brand new content The MCC before the latest update was 117GB (nice) and after the 30GB download it is between the 120 - 130 GB mark (haven’t checked it since installing the update)
