I really don’t know anything about the Sangheili before halo rings and I’d like to know more about them.

I think the OP means before the initial mass-firing of the rings and the subsequent repopulation of sentient life.

Halo Legends is the closest have to a canonical representation of them pre-firing. It doesn’t show them as much more than primitives.

Halo Legends show the Sangheili as primitives as that is after the array had already fired. As that scene shows the recloning process of the many species.
