In Halo 3, the Guardians were turrets, so maybe the forerunners made bigger turrets… And that is what we are seeing in Halo 5.
Technically your not wrong. Guardians were used to escort key ships so it ‘technically’ is a giant turret.

Guardian Sentinels from Halo Legends (which were based on concept art for cut content) and Guardians in Halo 5 are not the same thing.
Whatever that the Guardians are, they are definitely a big menace in Halo 5: Guardians. The Guardian who was attacking Sanghelios was huge!

When they first announced “guardians” I immediately thought of the weird mines from sand trap
