The Covenant is composed of numerous species with the Unggoy, Kig-Yar, Lekgolo, Huragok, Yanme’e, Jiralhanae, Sangheili and San’Shyuum all making up the Covenant. However, the Covenant have also encountered several other races that aren’t actual members of the Covenant as the species are either possess a small population or they are politically insignificant to make them members of the Hegemony. One of these Fringe Races is the Yonhet, seen in Halo: Nightfall. As of now we are only aware of the Yonhet who make up the Covenant Fringe, but we know there are many more species out there that make up the Fringe.
As for population, you really need to work on your sense of scale. First off, do you really expect a galaxy spanning empire to only number in the millions or even billions? That’s a pitifully low estimation (then again sci-fi writers often have no sense of scale). Considering that the Sangheili have been space faring for over 2,000 years (almost 3,000), the Sangheili could easily number in the trillions. The San’Shyuum at make up the Covenant however only number at around 21 million given their difficulties with breeding. As for other races, it’s more difficult to call however we know that the Jiralhanae only number in the low billions given how they were only uplifted 60 years prior to the Great Schism (so VERY low numbers, certainly less than Humanity before the war certainly, perhaps even less than Humanity post war), the Lekgolo do number in the trillions individually and the Unggoy had breeding restrictions during the days of the Covenant however now they’re population is likely increasing as they lack anyone enforcing their breeding restrictions.

I agree, I may be wrong but I think it’s either stated or implied the covenant domain is roughly an arm of the milky-way spiral. That’s probably at least a hundred thousand star systems. I’d think its easy to assume their numbers are in the trillions. Also this wasn’t a total war for the covenant, they only brought a fraction of their forces against us.
Forgot your other point, yes I’m sure they know of many other species. As far sentient I’m not sure of that. I don’t know that any others have been offered or refused entry into the covenant. However it is remarked that a few Sangheili found it strange that humanity was not even offered the choice given no prior reason not to.
The Yonhet from Nightfall are a great example of lesser known species.
They also seem like a species that humans could get along with.
Theres also those Draquoi or Sharquoi(the species cut from halo CE) that were confirmed to be in the covenant.

I’d say more than both. Like quadrillions of them as a total! And doubtfully for the new/more species. Bungie/343i discarded/deleted certain enemies that could’ve been ingame/story. But all we have are the races we got.
