Stories & novels after Halo 5?

Can you list all short stories and novels that are set after the events of Halo 5 important from the point of view of Halo infinite storyline?

There is one short story, for example, from Halo: Evolutions called The Return involving an Elite Shipmaster and a reference to an unnamed Forerunner Monitor (Mendicant Bias/343GuiltySpark?) set ‘7 years after the end of Human-Covenant war’ which is 2560, the year in which the latest Halo trailer is based.

Bad Blood and the upcoming Shadows of Reach immediately come to mind

A flawed question, simply because we do not know enough about Infinite’s story to say which novels are important or not. This is especially true if they sideline the Created conflict entirely, making most post-H5 books technically unnecessary.
Besides, I think you should read all of them if you consider yourself a Halo fan. The wiki should tell you which books were released after 2015. I suggest you hurry as there are only 3-4 months before the game launches.

Not necessarily the books released after Halo 5. Halo: Evolutions was released in 2009 but it has stories set in the year 2559-2560 i.e after the events of Halo 5

It had ONE short story written at a time when the future of the franchise was very uncertain. It remained controversial among fans for years afterwards, even after H5 was released. Needless to say, such stories are the exception, not the norm. I highly suggest not putting so much stock in them.
