So there was a life sized Sangheili statue that was on display at Halo: Outpost Discovery back in 2019, and I couldn’t find anything on it’s whereabouts as of present, so I was wondering if 343 still has it stored somewhere?

Everything seen at Halo: Outpost Discovery probably came from the Halo Museum at 343industries. If I had to guess, that is where it currently is.
