My understanding is that they are Forerunner A.I correct, and not living, breathing organisms, while the Didact is a living, breathing organism. If this is true, where are all of the other living Forerunners? Requiem is a shield world so they should have been safe from the activation of the Halo Array, at least the ones on Requiem.

No, because if it’s true, then it’s a spoiler, and you should not be posting that either way.
I remember reading, and seeing a diagram by 343i in one of their vidocs, that the Promeathens are actually Forerunners. The way they are in them, is that their arms are pulled up and behind them, as they “slump” forwards, giving the night that “hunched” look. It wasn’t specified whether the Forerunners were living or they “stored” their memories/personalities in these automations, as it is mentioned in lore, I believe.
It was mentioned in the lore that it’s definitely possible to do. A number of Monitors were former living beings.
Nowhere was it confirmed where the Prometheans actually came from though.
I could have sworn that they were forerunners…hold on, I am doing some digging
