So at the end of the campaign, Chief blows up the Didact’s ship and the Didact falls to his death. But in the last video after the credits, you hear him speaking. My question is, is the Didact really dead? Or is this still unknown?

More than likely he is alive. His dialogue at the end, while vague, refers to his activation of the Composer and his defeat at the hands of Chief.
Also consider, his armor is probably the most advanced in the Universe, and the Composer may not have an effect on him if you believe that it was fine tuned to only compile Humans. So in my opinion, I dont think anything that happened to him is enough to conclude he’s dead.
