Knights are warriors composed onto digital intelligences.
Soldiers and Warden Eternals are artificial intelligence.
Is it possibe that the UNSC/Cortana could take over these bodies by installing their own AI’s into them? Not all of the Knight’s and Warden Eternal’s body’s can be occupied at the some time so that means there are millions of bodies sitting idle.

It is probably possible, although unlikely. IIRC in spartan ops Halsey said Promethean thingy they recover is similar to an ai matrix.
I don’t see why they couldn’t. It is just a robot at the end of the day. If the Warden can control “millions” of bodies from inside the Domain then it’s reasonable that an AI could.
I dont think they will though. They already showed Cortana as able to make a hard light hologram of herself which would render the need for a robot body pointless. As an aside it’s probably made out of the same stuff the glowing “core” of a soldier is made of. The same would be true of the other created. I can’t see any of the good AI possessing the Knights because they wouldn’t fit with the UNSC faction. I mean the only reason the Warden uses a powerful robot body is for sport and his sadism.
I don’t see why UNSC AIs couldn’t be placed in the body of a Promethean Knight, though I don’t see many UNSC Ais having direct combat roles either. If any Created AIs are going to be placed in such bodies, they’d likely be those Cortana threatened to compose for “clinging to their old ways.” However, the semi-savage Covenant associated intelligences might make for some more beastly Prometheans if Cortana incorporates them into the Created.
I wouldn’t be surprised if Halo 6 stuck human AI in new Promethean/Created bodies as a sort of mini-boss. It’s not the worst idea when it comes to the whole Created faction, at least the AI would be put to good use.

The thought of Cortana putting the AI into them for her own use didnt come to mind. But i cant think of much else she would use them for other then maybe commanding Forrunner ships. I only thought of the UNSC doing this to help battle Cortana/Forrunners.

They probably could. Maybe it’s harder to control something that’s part of the Domain/Network as an outsider. Plus it’s possible that’s coming into contact with that would risk Cortana manipulating or subverting the AI.
However gameplay and the factions look comes into play. Unless it’s a one off it’s not going to happen because Prometheans don’t fit with UNSC marines. “Chappy” droids would but then they wouldn’t be Prometheans.
