When I pin a challenge it is not on the screne while I play. It only pops up sometimes just like all the other “non-pinned” challenges do. Though when I am in the main menu I can see it to the right but it doesn’t do me much good there.

I am not certain, because I have noticed this too, but I think it is that it isn’t suppose to pin it to your screen during gameplay. I think it pins it to your menu screen so you know what challenge you are wanting to work on and therefore know where to go when navigating the menus to find what game/method you want to work on that challenge. That way, you can see what challenge you want to work on at the time in the main menus and not have to keep going back and forth to the challenge hub until you want to pin a new challenge.
