I liked the storyline of ancient humanity hunting the Flood infection and glassing any infected worlds. But why couldn’t they just send the Forerunners a text explaining why they’re roasting planets, before the Forerunners got butthurt

Thousands, if not tens of thousands, of years of animosity will do that. Humans claiming the Mantle was seen as an act of sacrilege to the Forerunners as a matter of course so that’s already a bad start for any diplomacy. It’s like an inverse of the India and Pakistan relationship, both countries hate each other, but are well-connected that if trouble stars to brew those in positions of authority can quickly reach the other. No such relationship seemed to exist for humanity and the Forerunners. You’ve also got some within the human ranks wishing to use the Flood as a weapon against the Forerunners (which never got anywhere but wouldn’t be a good idea to blow the presence of that trump card right?) and the notion that the Forerunners wouldn’t believe them. Hell, the humans did a good job of pruning the Flood away that the Forerunners actually didn’t when the war was over and only saw the truth when it was too late.
