I like that we can choose the background now. But it won’t save. When I restart MCC (Xbox) it reverts to the default background. Anyone else with this issue (or a fix)? I like this feature but it’s useless so far.

Looks like a bug, I’ve seen plenty of people encounter this issue on Twitter.
We’ll hopefully get a hotfix for this one before the next proper update.
