According to the xbox preview forums this is a known issue.
They are working on a fix but you can apparently get around the problem by just waiting for the install to finish. apparently is a display error that it goes over 100%.
Anyway I will copy and paste it from the xbox preview forums
“Game Install: When installing some game titles with pending updates, you may experience installs which show a progress rate greater than 100%.
Workaround: The game will eventually install correctly; simply wait for the install to finish.”
So looks like you just need to ignore the fact it’s gone past 100% and wait as it will eventually install correctly.
