I just started the game today and I look at the controls, and see that when you jump and hold the left trigger you fly in the air and have your scope out.So I turn off auto stabilize, but when I try and fly nothing happens!

In Halo 5, there is a hover mechanic that you can activate by using Smart Scope while in mid-air. This lasts for a few seconds and during a hover, you can look around and shoot. You can cancel the hover by getting out of Smart Scope. You can also initiate a Ground Pound by holding the Melee button during hover, which will let you aim the attack briefly before launching you towards the ground.
Not sure what you mean when you say you turned off auto-stabilize, but if you changed your controls or somehow turned off Smart Scope or the hover ability, then you won’t be able to do it anymore.
