Guessing you didn’t read Uprising? He stealthed through most of it, only fighting when he had to. Things really got hectic when the Dreadnought passed Io and Chief managed to receive UNSC signals. He attempted to assassinate Truth but was unsuccessful, got out of several sticky situations through skill and luck, and ultimately bailed out after contacting Lord Hood.

You are correct. Part of the Spartan augmentations was an ability to go extended periods of time without food or water. There’s even a special Spartan nutrient bar (can’t remember the name) that is designed for Spartan metabolisms. But by most accounts, it ain’t very tasty. Some other augmentations that fall in this survival category is their ability to withstand the vacuum of space for longer than normal humans. They can’t handle it for too long, and even small exposure will lay a Spartan up in the hospital for a while, but I’m pretty sure it’s something like five minutes EVA without protection.
