Not sure if this is because Bungie and 343 are doing the 'ol switch-a-roo or because I recently changed my gamertag, but when I sign into Waypoint on my console or here I just see the generic spartan instead of MY spartan. Not a BIG deal but I was wondering if this has happened to anyone else recently?

Must’ve been a glitch due to you changing your gamertag. It should be back to normal in a couple hours.
P.S It’s happened to me before, so it’s nothing new.

Yeah, that’s something you should of said at the start.
I suggest that you shoot BS Angel a message stating your issue, and she’ll point you to the right people, or the right people will get back to you.
The same thing happened to me. It’s been almost two weeks since I’ve changed my Gamertag, and the character model has not updated.
EDIT: In case anyone happens to browse this thread with the same issue, I thought you’d like to know that the model finally updated.
