The only disappointment I can remember having with Halo 3 was that after the Gravemind’s raging tentacles and rhyme in a mid-game cutscene, instead of taking the next expected step of fighting (or at least having to dodge) the Gravemind, I only had a couple of pure-forms (from what I remember) to face.
I understand time-restrictions of the period, and how Bungie has a hard time with boss-fights (and apparently 343 as well cough Didact cough) but I think if there is a Halo 3 Anniversary, it should have a Gravemind boss-fight, at SOME point in the game. If it’s too difficult to stick into the original Halo 3 campaign with its engine, and all, then I’d go for a standalone vs.Gravemind game-mode that is unlocked at some point in the campaign. (Now that I think of it, Flood Firefight would also be very welcome.)

That x10000000^
But in the event that it does happen and if my best wishes are crushed, expecting a different experience minus a graphical/audio ogrehaul, especially an entire boss fight being added, is nothing short of wishful thinking.

Agreed, there is a time when remakes should come to a halt, and H2 should be the last game to be remade.
