The Master Chief Collection includes nearly every bit of DLC released for the Halo games - all DLC maps are available to use and forge on. The only items that are missing are some of the cosmetic items found in Halo4 - namely weapons skins and some of the armor 
Not Halo Reach or Halo Wars 1.
No, they aren’t available sorry - the idea was was to compile the 4 major Halo games into 1 box: the saga of the Master Chief, in preparation for Halo 5 and also pay homage to Halo 2 with the Anniversary edition. ODST was never planned, I guess it was added due to the quick turn around they could make with it, as it runs on the Halo 3 engine. I imagine we’ll be seeing Reach & Wars come via backwards compatibility though, they seems to be strong contenders for being added to the list come November
