So, FUD is set 30 years before the Halo event, why Master Chief wear a Mark VI and not a Mark V?
Chief is outfitted with the Mk. IV MJOLNIR, not Mk. VI.
It’s actually Mark IV and I guess that’s how 343 envisioned it. Also technically This is what Mk VI looks like now, so there are some differances between them.
The initial version of the Mark V powered exoskeleton was issued to the SPARTAN-IIs and several SPARTAN-III commandos on November 24, 2551. Mark V is the halo 1 armor.
The Mark IV MJOLNIR Powered Assault Armor was the fourth version of the MJOLNIR Powered Assault Armor series. The suit was issued to SPARTAN-II commandos on November 27th, 2525,[1] and was in service until November 24th, 2551, when it was replaced by the Mark V.

It’s mark IV.
But keep in mind there’s multiple variations of Mark IV which are all canon, ie Jorge’s helmet, the armor in Halo Wars, etc.
In some different media Chief is wearing the halo wars incarnation, but the FUD version has been seen in halo legends before.
If anyone ever gets annoyed by the armor he’s wearing, keep in mind chief has probably changed his armor on multiple different occassions.
I don’t care what 343 has made “cannon” the books say that Spartans all wore the same helmet and armor. Mark IV looks like the armor from Halo Wars and the next armor issued was Mark V from Combat Evolved. There for he is not correctly in the “right” armor.
