Of all the franchises that I’ve invested a decent amount of time into, Halo, so far, is the only one with a single timeline/universe, as far as I know. So, I was thinking, what if we got a piece of the franchise (like a comic book miniseries or something) that focused on if the Halo timeline had taken an very different turn at some point (think something along the lines of Reach not getting discovered)?

alternate universe of Halo? Well, that depends on your way of thinking but H4-> forwards could be considered as a alternative universe though that depends on the viewer.
though a more convenient alternative universe could be quite interesting to see even from as far away as from the forerunners not destroying the precursors or covenant not forming up. Though a bit closer like from human-covenant war could be the only changing thing. So many possibilities and its really an interesting idea really.
You imagine something like these old Star Wars Comics,which told how the story would have ended if someone would died or so?

Well, I suppose you could say that, but I’m really more intending that they’d be official explorations of alternate events.

Yeah, pretty much. If the Forerunner-Precursor War had a different outcome, if Jul 'Mdama had been transported to a different Sangheili colony, and so on.

Not familiar with the old Star Wars comics, but it sounds like it’s the same idea.
