So I am considering getting the H5/MCC digital bundle since its on sale for $55. I own both on disc already, yes I am so lazy I may spend $55 just so I don’t have to change a disc out. My question is how will this work exactly? Will my saves transfer over? Or will I have to repeat some stuff? Do I have to uninstall my disc versions or will it essentially copy over what is there? Has any one had disc version then installed the digital one? Should I transfer the H5 and MCC to an external hard drive then download to my Xbox one? Any tech savy people have any suggestions.

It doesn’t work like that. It’s the same game regardless. I could give you my copy of h5 the xbox would still read it as the same thing.
The disc is essentially just the ‘key’ so to speak. So once you go digital your game will be the same but your key will be stored on your xbox/account (I think.) I’ve done this before with another game, bought a digital copy because I enjoyed it (and for convenience) and then sold the disc to my brother.
I just wanted to confirm that I have done this and you don’t need to do anything for it to work, the game will recognise you have a digital copy and no longer require you to insert the disc. I’ve also never done this without an internet connection so I can’t comment there.
