I prefer full sets.
Even if I mix parts from variants of the same armor.
Unless I’m recreating something we don’t have.

Mix and match. I really like pairing the Recluse armor with helmets like FOTUS, Argus, Wetwork, and so on. The Recluse’s thruster jets just look so cool.
I prefer full sets, except for when I wear helmets that just have armor re-skinned from another set (Locus, etc.) A lot of people want more customization options, but I’m personally ok with it like this, since I would just wear the corresponding armor anyway.
Mix mach. They tend to look more unique and stand out more.
Mark IV helmet looks good on Noble armor, but other than that I prefer to just go with full sets. Between the lack of customization, weird armor shaders, and that hideous pink trim on Red Team’s armor that makes some otherwise awesome looking armor (Security, Scout Outrider) look positively hideous, mix-and-matching armor is pretty much pointless.
Seriously, get rid of the pink. And please, for the love of God, give us BLACK techsuits!
Mix match
It’s better off being mix and match. That way it appeals to people who like customising each individual piece and those who like full sets. It’s win-win if you can unlock the armour set as you do in Halo 5 currently.

It seems a lot of people think you’re comparing H5 customization with MCC customization when you say “full sets.”
Ordinarily I have to have symmetry with things like this but I actually preferred Reach’s customisation options. If we could get that into Guardians it’d be awesome.
My OCD wants full sets unless is HCS armor then any helmet is OK.
Mix match and besides, you can still get your full set… the more options the better.
I like both, currently I’m rockin’ Wrath Anhur helmet with the mythic Wrath armor.

The full AirAssault set is so rare worn by others,that it already unique.
I like to mix and match (as much as we can, anyway), to create as unique of a Spartan I can. I miss full customization, so I’m going to change as much as possible.
I don’t think I’ve ever used a full set other than Helioskrill.
I like to use matching sets of Athlon usually. I am still hunting down the elusive Athlon Champion helmet ($50 of Pro Team skin packs /later…)
Mix and match. I love the recon helmet but hate the armor with the stubby wings.
