If I was to try and recreate Emile’s armor in Halo 5 what would be the closest set? Would it be Kelly’s?
that’s a tough one to do with Halo 5 armor since there aren’t many with ammo pouches and ammo on the armor. If you want to go that route then the Soldier armor would be the best route.

EVA helmet, so yea, kinda. I don’t think there are any chest pieces that have grenades on the torso and a giant knife on the arm, though, lol.

Na there are no cool stuff like knives or grenades in H5. Just greatly deformed masses of armor.
Good luck, All I can think of is Eva, hopefully 343 will start looking at the older designs from older Halos more and incorporate that into new Halo 5 armor, then you should have a better chance, but at the moment, I doubt anything will look as good as that. Halo 5s armor is quite, well disgusting tbh
343 should just return to Reach armour design. Most of their armour are ugly af!
Buck armor got a knine on his chest or maybe nigthfall armor since it got some straps with ammo pouches.
For the helmet,everything eva-like: EVA. Hermes, orbital Freebooter,bucanner or even LOCUS for the intimadating aspect
