Yes, the Xbox Series X and S are just playing the Xbox One version of Halo 5 on the same servers. As far as I know, there haven’t been any games released yet that don’t allow Xbox One and Xbox Series users to play together.

Not quite, as long as a game supports Xbox One & Xbox Series Console’s they’ll be able to play together. First Party titles will continue to be compatible unless they explicitly say this is a “next gen only” game.
The only case where this wouldn’t be true is if they release separate editions of the game for Series Consoles & Xbox One consoles like some sports games do.
