Do all daily and weekly campaign challenges have to be done on normal or above? Or can I just do it on easy?
Last I checked, Campaign challenges could only be done on Normal or higher (unless the difficulty is specified in the challenge description).

If a difficulty is not specified, it needs to be Normal or higher.
If it just says “in the campaign today”, and does not specify a difficulty, then it is normal or above.
If it does specify a difficulty, it means either than difficulty or higher, I think. Like if it says “on Heroic”, completing the challenge on Legendary should work.
If its a “in any game mode on reach” challenge, then any difficulty, including easy, will work
