I have the normal 343i Skins, but I think you can earn the Ice Unicorn skins by playing with/against a 343i employee during a community play date. Is that correct?

That’s correct. You need to play with or against them during the weekly social streams.

Is it every week? I’m not sure where I can check for updates on this site, so it may be an external place where the streams are announced.

It’s every Wednesday at 1:30pm PT at mixer.com/halo.
I know they announce them on Twitter, but there are probably other places as well.
To add to the above - 343 has weekly Mixer social streams, but they don’t always play MCC / H5 which lets you get the skins. Last week, for example, they were playing through the Halo CE campaign. There’s usually a tweet from the Halo twitter account a day or so before the stream to let you know who is joining and what they’re playing. There are sometimes playdates outside of the social streams, generally they get announced in the bi-weekly community updates

I have the ICE Unicorn one from the play date when me and my brother met them in mcc lol, you can look at mine! 
I think on the ICE Skin it says “Stay Frosty”
(I do know this is the Halo 5 thread)
