So if Cortana has “a few million Wardens” then we can probably use this to infer how many Prometheans she has.
We fight 8 Wardens in the campaign and for arguments sake lets say that during the campaign we fight around:
15 Battle Wagons
30 Knights
200 Soldiers
300 Crawlers
Now, yes we do see some inactive ones and there are others that get zapped out by Cortana. But then we’d have to consider how many off screen Prometheans there are on Genesis, Sanghelios and Meridian. Plus the Warden is more likely to be encountered at sites close to the Domain and is actively trying to intervene during the Breaking. So for simplicities sake I am just going to count number of enemies. If somebody actually has a more accurate total, be my guest. 
So lets say that a few million is five million and that for every eight warden we have the above number of Prometheans. This would give you roughly.
9.375 million battle wagons
18.75 million knights
125 million soldiers
187.5 million crawlers
for a total of 340.625 million Prometheans led by five million wardens.
That sounds like a lot. But you have to consider that the UNSC has 20 billion people (60 billion pre war with 2/3 dead = 20 in 2558) and even if only 2% of them are soldiers this is still 400 million trained soldiers. Which would suggest the Prometheans are actually outnumbered significantly since more soldiers could be conscripted in a crisis and she is definitely a crisis!

Remember that the Prometheans can canonically re-spawn, and I would expect that the Warden’s bodies do as well. A Promethean force with lesser numbers could still hold its own, because those numbers are never exhausted so long as the entity controlling them is willing to put the resources into winning.
BTW I completely forgot about that score attack mode. I suppose that would tell you how many enemies are in campaign. Course then you have friendly AI kill stealing. 
Re-spawning does complicate the picture, however it would only matter in the long term unless the respawn time was nearly instant. In the short term the human would have the opportunity to win by destroying the production facilities or teleport machinery or presumably Domain conduit.
The prometheans would probably come to an end just like how the flood did.

At least.Dont think the Chief killed everyone on Requiem,so we have atleast 7million and one promethean knight at the beginning of Halo5.
Wouldn’t the Didact also have had all of the Warrior Servants and Ancient Humans that he composed?
